I once called the farmer we get our prickly pear nectar from to ask why this time it seemed a darker color. This was probably the second time we made Prickly Pear Sour. She responded, “Oh well that’s just what Mama Nature served us this time around.”
And she was right. Although stunning in color, prickly pear fruit often ranges from pale pink, bright fuchsia, or a muted brown. Like most produce, it all depends on the time of year, the plant itself, or the weather.
It was just last year we were able to figure out how to make our Prickly Pear Sour year-round. This flavor started out as a seasonal only offered in February to celebrate Arizona’s birthday and September, when the fruit was at its peak. It's our favorite flavor for tequila, vodka, whiskey, or even simply sparkling water for a bright pink soda.
We now work with a farmer who is able to provide prickly pear nectar by the gallon and we make Prickly Pear Sour almost every single week. The thing about prickly pear is that the color varies. We took these photos of four different batches all made on a different week of July with different harvests of prickly pears. Isn’t it amazing? The range, the shades, the rainbow of color. We’re honestly obsessed.
We wanted to celebrate Prickly Pear Sour for two reasons. The first is to clear the air. Since we do not add anything besides the three ingredients that make Prickly Pear Sour, the color is known to oxidize. A batch made just one month ago can deepen in color. It never affects the flavor, it’s still the deliciously tart strawberry-like lemonade that we have come to know and love.
The second is because your mixer is always made fresh in small batches. Always. A really big batch of Prickly Pear Sour made in a giant kettle that yields cases upon cases of product could possibly be more cost-effective...it’s just not what we do here at Iconic. We produce each batch carefully with the freshest ingredients to ensure you are getting a mixer that we proudly can say, “yeah, we just made that last week.” We never want to sit on inventory and sell you something that’s been dying on a shelf. We keep it fresh. Every single time.
