The Bellini was created in Venice to celebrate the magical but brief peach season. Here at Iconic Cocktail Co, we’re celebrating the similar tradition. Pichuberry Peach Sour is a flavor that we’ve made time and again as a rotating seasonal. It features locally grown peaches from our friends at Agritopia Farms in Gilbert and goldenberries from another local company represented in Arizona, Pichuberry.

As we've grown as a company, we have learned some very valuable (read: hard, challenging, character building) lessons along the way. I think we've bottled up the taste of that in this last batch of Pichuberry Peach Sour. This is possibly the most complicated flavor that has come out of our kitchen for the last three seasons.

This year, we have learned the hard way that we truly can make only one batch of Pichuberry Peach Sour and we’re not sure if we’ll be able to make it again next year.

Trust us, we attempted to figure out how to make this mixer easier to produce. We love this flavor and we know lots of other people do too...but at the end of the day, we can’t guarantee a consistent product and it’s expensive to make.

The first batch is ALWAYS beautiful because we have access to Agritopia’s peach trees but that season is short in Arizona, lasting about three weeks. After that short window, we’re stuck buying overpriced peaches that really don’t have a ton of flavor. We even tried a batch with frozen peaches and the results were not up to our standards. 4oz Sparkling Wine

1oz Pichuberry Peach Sour

  • Add Pichuberry Peach Sour to a Champagne Flute

  • Slowly top with sparkling wine

  • Stir gently to combine

THE EPIC SHANDY

4oz Hard Cider (we used Flagstaff’s Stoic Cider)

1oz Pichuberry Peach Sour

  • Add Pichuberry Peach Sour to a chilled mug

  • Slowly top with cider

  • Stir gently to combine

Made only as long as local Agritopia Peaches are ripe and ready, Pichuberry Peach Sour will come and go quickly.
