Sparkling Wine Cocktail for a Bubbly New Year
Champagne has to come from Champagne, France but that doesn’t mean Arizona can’t have its own unique bottle of bubbles. Sonoita Vineyards in Southern Arizona is making each vintage of their wine a one of a kind experience. We grabbed a bottle of their Sparkling Brut from Sphinx Date Co to celebrate the end of the year!
This crisp, bubbly and fruity fresh wine pairs perfectly with Shrubwell’s Plum Date Rosemary Shrub. Experts in making kombucha, Chris and Country of Shrubwell have mastered making uniquely flavored shrubs that are great in cocktails. We love pairing their tart mixers with our simple syrup to create a truly elevate cocktail without a ton of work.
Our Cascara Vanilla is the perfect amount of sweetness this cocktail needs. Made with the husk of the coffee fruit and whole vanilla bean, Iconic Cascara Vanilla offers familiar notes of sweet vanilla and compliments the taste of a fresh plum.

Brass Bubbles
- 4oz Sonoita Vineyards Sparkling Brut
- 1.5oz Iconic Cascara Vanilla
- .5oz Shurbwell Plum Date Rosemary Shrub
- Rosemary sprigs
- Plum Slices
-Combine all in a wine glass with ice
-Stir gently to combine
-Garnish with rosemary and plum
